Ribeye (Cube Roll), South American Beef, Fresh or Frozen
Cube roll is the trade name for the boneless, trimmed ribeye: the eye of the lomo alto with its seam of fat. Argentines call it ojo de bife; a Spanish butcher sells a slice of it as entrecot. Ours is South American beef, sold by weight, fresh or frozen.

How to cook it
- Thaw the frozen option slowly in the fridge, still in its pack, for about a day.
- For steaks, cut slices two fingers thick across the grain.
- Sear on a hot barbecue (US: grill) or in cast iron. The fat seam flares over charcoal, so keep a cooler zone free.
- Medium-rare, 54–57 °C (129–135 °F) at the core, suits ribeye: the marbling needs some heat to soften.

Cube roll, ojo de bife, entrecot, ribeye: all the same?
The same muscle. Ribeye is the British and American name, ojo de bife the Argentine one, cube roll the trade word for the whole boneless piece, and entrecot what a Spanish counter calls a steak cut from it. See ribeye steak in Spain.

The label says South America, and this page goes no further. For the country of the current batch, write to us in English on WhatsApp before you order.
How much do I need for a barbecue?
