Holstein-Friesian Beef in Spain: Vaca Frisona and the Dairy Cow Steak
Vaca frisona in English is Holstein-Friesian cow: the black-and-white dairy breed. In Spain, cows that have left the dairy herd are a classic source of old cow steak, vaca vieja. We sell two loins from this breed: a Friesian cow loin with the fillet (US: tenderloin) and a Holstein cow loin without it. Frisona and Holstein are two names for one breed.

Two loins of Holstein-Friesian cow
The Friesian loin with the fillet is listed at €36.30 (September 2026), which the Spanish product text describes as an approximate price per kilo. The Holstein loin without the fillet is listed at €51.70 (September 2026). Neither Spanish listing states the weight of the piece or whether the bone is in, so check the Spanish product page or ask us on WhatsApp before you order.

Why Spain puts dairy cows on the grill
Britain and America eat young cattle. Spain does the opposite with its best steaks. The famous chuletón comes from vaca, which Spanish law (Royal Decree 1698/2003) defines as a female over 48 months: darker meat, yellow fat, deep flavour. A dairy cow that leaves the herd is by definition a mature female, and the Holstein-Friesian is the usual dairy breed, so frisona has long been one of the standard animals behind old cow steak on Spanish grills.
That is the general picture. About our two loins we state only what the labels state: cow, and the breed. We give no age beyond “mature cow” and make no claims about feeding or marbling.

The two loins, side by side
The loin with the fillet has sirloin on one side and fillet on the other. Cut across, it gives steaks of the T-bone kind: two muscles, two textures. The loin without the fillet is the plainer piece: one long muscle that slices into chuletón on the bone, or into entrecot off it.
How a whole loin is used
Nobody cooks a loin in one go. You portion it on the day it arrives, cold from the fridge, with a long sharp knife. On the bone, the ribs set the rhythm: one steak per rib. Off the bone, you choose the thickness. The uneven ends go for dicing. What you will not eat this week is wrapped steak by steak and frozen. Cooking mature cow loin steaks
- Cut thick. A thin steak of mature cow is overdone before it has a crust.
- One hour out of the fridge, surface patted dry, coarse salt as it goes on the heat.
- Barbecue (US: grill) or heavy pan, as hot as you can get it. Sear both faces, then render the fat edge.
- Rare is 50–52 °C (122–126 °F) at the core, medium-rare 54–57 °C (129–135 °F). On steaks with the fillet, keep the fillet side towards the cooler part of the grill.
- Rest five to ten minutes on a warm board and slice across the grain.

What is vaca frisona in English?
Friesian cow, or Holstein-Friesian: the black-and-white dairy breed. On a meat label, vaca also tells you the animal was a female over 48 months.
Is Holstein beef different from frisona beef?
No. They are two names for the same breed. Our loin with the fillet happens to be labelled frisona and the one without it Holstein.
Is dairy cow beef any good as steak?
In Spain, mature cow is the grill-house steak, and dairy breeds are a traditional part of that. Expect what mature cow brings: darker meat and yellow fat. We make no further claims about these two loins.
Are the loins on the bone?
The Spanish listings do not say. A loin sold with the fillet attached is normally on the bone; for the other, assume nothing. Ask us on WhatsApp how the current pieces are cut.
How much does a loin weigh?
The listings do not give a weight. Write to us before ordering and plan with the shop rule: 400–500 g per person on the bone, 200–250 g of boneless meat.
