Fresh grilling sausage · chorizo criollo · 600 g

Criollo sausages (chorizo criollo), 600 g

Chorizo criollo is the fresh, raw sausage that opens an Argentine or Uruguayan asado. It is not the cured chorizo you slice for tapas: it has to be cooked through on the grill. One tray holds 600 g and costs €13.90.

How to cook it

  • Sausages go on first, over medium embers and never over flames, for 15–20 minutes.
  • Turn them every few minutes and do not prick them, or the juice runs into the fire.
  • They are done when firm to the touch and cooked right through, with no pink in the middle.
  • For a choripán, split a cooked sausage lengthways, give the cut side two minutes on the grill and put it in a crusty roll.

Indoors, a heavy pan over moderate heat does the same job. Quantities per guest: our BBQ calculator (in Spanish).

Questions about criollo sausages

Where can I check ingredients and allergens?

If you have a food allergy or intolerance, ask us on WhatsApp for the ingredient and allergen list before you order; it is also printed on the label. We make no ingredient claims on this page.

Is it like a British banger?

No, and we do not sell British sausages. The criollo is the closest thing we have: a fresh sausage, but one made for embers, not for a frying pan at breakfast.

What should follow it on the grill?

In an asado the sausages come off first and the slow cuts follow: short ribs and flank. Our Criollo asado box, shown below, packs that sequence into one order.

The asado box, and the cuts that traditionally follow the sausages.
