A 1 kg chuletón, the thick bone-in steak cut from the rib of beef (US: prime rib), from a retinto buey. In Spain that word has a legal meaning: a castrated male over 48 months (Royal Decree 1698/2003). The label reads chuletón de buey retinto, and one steak serves two.

How to cook it
- Leave the steak out for an hour and dry the surface well.
- Heat a cast-iron pan until it smokes. Brown the first face for about three minutes without moving it, then the second, then the fat edge.
- Move the pan to a moderate oven and probe next to the bone.
- Take it out at 50–52 °C (122–126 °F) for rare or 54–57 °C (129–135 °F) for medium-rare.
- Rest for ten minutes, season with coarse salt and carve at the table.
Buey on the label: what it means
Is buey on a Spanish label really ox?
By law, yes. Royal Decree 1698/2003 reserves buey for a castrated male over 48 months. A castrated male under 48 months is a cebón, a female over 48 months a vaca and an uncastrated male over 48 months a toro.
How does it differ from the mature cow chuletón?
Same cut, same weight. The difference is the animal as the law defines it: female over 48 months, or castrated male over 48 months. Both are on the chuletón page.
What would I ask for at a Spanish butcher’s?
Ask for chuletón de buey and check that the label says buey. More counter vocabulary is in beef cuts in Spanish.
