If you have eaten Manchego you know the family: a hard, pressed Spanish sheep’s cheese that cuts into clean triangles. This one is not from La Mancha but from Zamora, in Castile and León, sold under the Campoestrella name and made with raw sheep’s milk. About 900 g, cured for several months, €40.59 (September 2026).

How to serve and keep it

Bring it to room temperature before cutting; a hard sheep’s cheese straight from the fridge is waxy and mute. Cut wedges, then slice each wedge into thin triangles. In Spain it is served with bread and often with membrillo, the firm quince paste; the Spanish page recommends it with wine and on a cheese board. To store it, wrap the cheese in waxed or baking paper instead of cling film and keep it in the fridge, away from the coldest shelf.

Campoestrella: what buyers ask

Is this Manchego?

No. Manchego is a protected name for cheese from La Mancha. This cheese comes from Zamora, further north, and we claim no protected designation for it. The style is closely related.

What does raw milk mean for me?

The milk was not pasteurised; the Spanish page states this clearly. If you avoid raw-milk cheese for any reason, choose our other cheese or ask us first on WhatsApp.
