How to cook it

  • Take the three large pieces out of the fridge 30–40 minutes ahead. The sausages cook first, over gentler heat, turned often and cooked through.
  • Buffalo is lean: grill the loin whole over medium heat, or cut it between the bones into chops, and keep it rare to medium-rare.
  • Then the yearling, then the cow. Sear hard, finish on the fat edge: 50–52 °C (122–126 °F) for rare, 54–57 °C (129–135 °F) for medium-rare.
  • Rest each piece for five minutes, slice, add coarse salt and taste from mildest to strongest: yearling, buffalo, cow.

Questions about the chuletón box

What about allergens?

The box contains fresh sausages. If you have a food allergy or intolerance, ask us on WhatsApp for the ingredient and allergen list before ordering; it is also printed on the label.

What will I notice between cow and yearling?

The cow is darker, with yellow fat and a deep flavour: the meat behind the classic Spanish chuletón. The yearling is paler, milder, more tender. Both are retinto beef.

Does the box qualify for free delivery?

Yes, on its own, on mainland Spain: at its listed price it is over the €129 threshold, which is counted before any discount.

Goes well with

The same chuletones singly, the retinto cebón version, and ibérico for two.
