What you get

Fresh or frozen Frozen. Thaw in the fridge for about 24 hours.

Secreto is thin and heavily marbled; pluma is the small triangle from the front of the loin; abanico is the fan-shaped layer over the ribs; lagarto is a long, narrow strip. More on our ibérico pork page.

How to cook it

  • Thaw, pat dry and season with coarse salt only. No oil: these cuts grill in their own fat.
  • The sausage goes on first, over medium heat, turned often until cooked right through.
  • The pork cuts want very hot embers or a smoking pan, and only a few minutes a side.
  • Ibérico pork may be served pink. Rest it for two or three minutes and slice into strips across the grain.
