Cantimpalos is a village in the province of Segovia, in Castile, and the chorizo named after it is a familiar sight on Spanish counters: a cured pork chorizo with a slightly hot edge. You can slice it for a sandwich or cook with it. 1 kg, vacuum-packed, €20.90 (September 2026).

How to serve and keep it

For eating as it is, peel the skin and slice thin at room temperature; it fills a bocadillo with nothing else. For cooking, cut thicker rounds. The Spanish page lists the classic uses: in a tortilla, in stews and braises, and on the grill. Start it in a cold pan with no oil so it gives up its own red fat. The Spanish page advises a cool, dry place for storage. Once the vacuum pack is open, wrap it in paper; in a warm Spanish kitchen the fridge is the safer choice.

Does it carry the protected Cantimpalos seal?

A protected geographical indication exists for this chorizo. The Spanish product page does not mention the seal, so we make no claim. Ask us on WhatsApp if you need to know.

How does it compare with the chorizo cular ibérico?

The cular is a thick ibérico sausage meant only for slicing. Cantimpalos is sold simply as pork chorizo and is as happy in a stew as on a board.
