How to cook it

  • Put it on with the first round, over medium embers, and give it time: cooked too fast, it burns outside and stays raw inside.
  • Turn it often. It is ready when well browned, firm when pressed and cooked through to the centre.
  • Slice it thickly onto a board while the steaks cook, or serve it in bread as a choripán.
  • In the kitchen, brown thick slices in a pan and add them to a pot of beans.

Can I slice it and eat it as it is, like tapas chorizo?

No. It is a raw product and must be cooked right through. The chorizo eaten uncooked is a cured sausage, a different thing.
