Lamb shanks (jarrete de ternasco), approx. 600 g
Lamb shank is jarrete in Spanish: the lower, meaty part of the leg, made for slow cooking. Our label reads osobuco o jarrete de ternasco; ternasco is another Spanish word for young lamb. The pack holds several pieces, about 600 g in all, sent frozen, for €25.30 (September 2026).

How to cook it
- Salt and pepper the thawed shanks and brown them well in olive oil. Take them out.
- In the same pot soften onion, garlic, carrot and ripe tomato with a bay leaf and a sprig of rosemary.
- Return the meat, add a glass of red wine and enough stock to half cover, put the lid on and braise at 150–160 °C (300–320 °F) for 2–2½ hours, or at a bare simmer on the hob.
- Forget the thermometer here: the shanks are ready when the meat slides off the bone under a spoon.
- Blend the vegetables into the liquid for a thick sauce and warm the meat through in it.
Questions about lamb shanks
What do osobuco and jarrete mean?
Both are names for the shank. Jarrete is the usual butcher’s word, for lamb and beef alike; osobuco, from the Italian ossobuco, usually means shank cut across the bone. The rest of the vocabulary is on the lamb page.
How many packs for four people?
Three, going by the shop’s rule for meat on the bone. Braised shanks reheat well.
Do you have the same cut in beef?
Yes: shin of beef, also sold as jarrete, as a whole joint of about 2.5 kg. It is on the stewing beef page together with ox cheek and diced beef.
