At a Spanish counter, diced stewing beef (US: stew beef) is carne para guisar, asked for en tacos. This pack is labelled Carne Tacos Añojo Retinto: 1 kg of ready-cut cubes of retinto yearling beef, 12–24 months old, at €22.66 (September 2026). A stew for four or five with no knife work.

How to cook it
- The vacuum presses the cubes into a block. Pull them apart and pat them dry.
- Brown in small batches. A crowded pan steams the meat grey.
- Yearling beef is mild, so build flavour around it: well-browned onions, tomato purée, beer or red wine.
- Bare simmer on the hob or 140–160 °C (285–320 °F) in the oven. Start testing at 1½ hours; allow up to 2½.
- Ready when a cube gives way under a spoon. To split the kilo, freeze half raw on the day it arrives.
Questions about this pack
What does “en tacos” mean?
Cut into cubes. It has nothing to do with Mexican food. “Carne para guisar, en tacos” is the phrase for any counter in Spain, and more of them are in our guide to beef cuts in Spanish.
Is añojo the same as veal?
No. Añojo is yearling beef of 12–24 months: mild, tender and pale red. It is what most Spanish shops loosely call ternera. The breed is described under retinto beef.
Can I use it for pies and curries?
Yes, in any recipe that calls for stewing or braising steak. For a darker, stickier gravy, the whole shin below has more connective tissue.
