Paleta · ibérico de bellota, 50% ibérico · approx. 5.5 kg

Ibérico de bellota shoulder ham (paleta), approx. 5.5 kg

In Spain a jamón is the hind leg and a paleta the front one: the cured shoulder, smaller and flatter, under the same label rules. This one reads paleta bellota ibérica 50% raza ibérica: acorn-finished, from a pig that is half ibérico by breed. Around 5.5 kg, whole or boned.

How to serve and keep it

  • A paleta fits a normal ham stand. The blade bone lies near the surface, so slices are shorter than from a ham.
  • Carve thin, at room temperature.
  • Trim the rind and yellow fat only where you are about to carve, and keep some clean white fat aside.
  • Use those fat strips to cover the cut when you stop, put a cloth over the shoulder and store it somewhere cool and dry.
  • Boned paleta and cut-off blocks go in the fridge, wrapped.

Paleta or jamón

Is a paleta a second-rate ham?

No. It is a different limb under the same tags. There is more bone in proportion, the flavour is often a little more pronounced, and for a small household it is the more manageable size. See our jamón ibérico page.
