How Much Does a Chuletón Cost? Price per Kilo in Spain, September 2026

On 25 September 2026 a chuletón, the thick bone-in rib steak cut for sharing, cost a median of €31.45 per kg from yearling beef, €58 from cow and €99 from ox in Spanish online shops. The figures come from 46 chuletones in 19 shops; table, method and carcass prices below.

  • The animal’s age moves the price more than the word chuletón
  • Ox (buey): €76.62–132 per kg, median €99
  • Our own prices are not counted in any range or median

What a chuletón is

A chuletón is cut from the lomo alto with the rib bone left on: rib of beef or fore rib on the bone (US: bone-in ribeye, prime rib), usually 1 kg or more and meant for sharing. The name gives the cut, not the animal, and the animal sets the price. Three ages matter on a chuletón label: añojo, yearling of 12–24 months, mild and pale red, often loosely called ternera (legally, ternera is 8–12 months); vaca, cow over 48 months, darker, with yellow fat, the classic choice (see old cow beef); and buey, ox, a castrated male over 48 months under Royal Decree 1698/2003.

Chuletón price per kg, 25 September 2026

The range runs from the lowest to the highest price found. The median is the middle price: half the products sit above it and half below, so a single extreme price does not move it.

Retinto, the native cattle breed of south-west Spain, has no row of its own, so retinto chuletones are sorted by age.

How we measured it

  • On 25 September 2026 we read the published prices of 46 chuletones in 19 Spanish online shops: butchers and meat shops selling to the public, not supermarkets, general marketplaces, wholesalers or discount shops.
  • Price per kg including VAT, as published; otherwise the price divided by the weight, using the midpoint of a weight range. Delivery excluded. A product out of stock counts if its price is still shown.
  • Only chuletones, chuletas and tomahawks; no T-bone. Each product goes to a row by the name the shop uses: a breed with its own row, otherwise the age stated. Tomahawks go apart, whatever the breed; names that fit no row are left out.
  • Each piece counts once, at the weight closest to 1 kg, and as a single piece rather than an offer pack. A row with fewer than three products gets no range or median.

Why ox costs more

Buey is scarce. In 2025 Spain slaughtered 9,325 castrated males over 24 months out of 2,383,979 cattle, about 4 in 1,000, according to the slaughter survey of the Ministry of Agriculture, Fisheries and Food (MAPA). Oxen are only part of that figure, and each takes years to raise. Yet the word buey alone does not fix the price: ox ran from €76.62 to €132 per kg and cow from €43 to €77, so the two ranges overlap. If you are offered buey well below that range, ask the animal’s age and whether it was castrated.

Old cow is not always dearer either: chuletones sold as vaca vieja had a median of €50.75 per kg, below plain vaca at €58. Ageing (madurado) costs cold-room time and, when the beef is aged dry, water and weight, but it does not turn a cow into an ox. Within one breed the steps are clear: our retinto chuletón costs €36.90 from yearling, €63.90 from cow and €99.90 from cebón, a castrated male of about 4 years, about 1 kg each.

From carcass price to chuletón price

Farmers sell the whole animal and are usually paid per kg of carcass (canal): the body without hide, head, feet or offal. MAPA publishes the Spanish average every week. Week 37 of 2026, 7 to 13 September:

Carcass Which animal € per 100 kg € per kg Same week 2025 (€/kg)
Cow (DO) Female that has calved 520.41 5.20 5.47
Yearling (AR3) Entire male, 12–24 months 610.21 6.10 7.05
Ternera (ZR) Animal of 8–12 months 668.87 6.69 6.95

Source: Informe semanal de precios y mercados. Sector vacuno de carne, semana 37/2026 (MAPA, in Spanish). Over the year the yearling carcass price fell 13.4% and the cow carcass price 4.8%. At week 37 prices and the average 2025 carcass weights from the MAPA slaughter survey (306 kg for cows, 347 kg for males of 12–24 months), a cow is worth about €1,590 and a yearling about €2,120.

A kilo of carcass is not a kilo of chuletón. The carcass includes bone, fat and cheaper stewing and mincing cuts; the lomo alto is a small part of it. Then come cutting, days in the cold room, packing and chilled transport. So €5.20 per kg of cow carcass and a median of €58 for a cow chuletón do not contradict each other.

How to compare and buy

Compare age with age, ask whether the beef is aged and for how long, check whether the price per kg includes the bone, and check the date. Our chuletones are on the chuletón page; ox is explained under ox beef (buey), and aged chuletones and loins are on the dry-aged beef page.
