Lamb shoulder is paletilla in Spanish, and this one comes from lechal, unweaned milk-fed lamb. The label reads paletilla de cordero lechal. You get one whole shoulder of 500–550 g, sent frozen, for €30.58 (September 2026). It is the classic Spanish roast: one shoulder, one person.

How to cook it

  • Thaw fully, rub with olive oil and salt, and lay it in a tin with a splash of water and white wine so that it does not dry out.
  • Go slowly first: a low oven, 130–150 °C (265–300 °F), for about 1½ hours, turning it once halfway.
  • Then brush with oil and raise the heat to 200 °C (390 °F) for some 20 minutes, until the skin is golden and crisp. Stay close; a piece this small burns quickly.
  • Lechal is served cooked through. It is done when the blade bone twists loose from the meat.

Questions about shoulder of lechal

Shoulder or leg of lechal?

The shoulder carries more fat and connective tissue, so it stays moist and forgives an extra ten minutes. The leg is the leaner of the two.

Is this a full-size shoulder for a slow Sunday roast?

No. At 500–550 g it is a single portion. For one larger piece to carve, take the 1.6 kg leg of lamb shown below.
