A Sunday roast for six, without buying half a leg of beef. This is redondo, the salmon cut of the silverside (US: eye of round): a lean, even cylinder of retinto beef, approx. 1.5 kg (1.4–1.6 kg), tied with kitchen string and vacuum-packed, for €41.90. Roast it pink and carve it thin.

Roast beef, served pink
- Out of the fridge an hour ahead; pat dry, season, and leave the string on.
- Brown it on every side in a hot pan, then move it to the oven at 160 °C (320 °F).
- Allow 35 to 50 minutes, but trust the thermometer: 54–56 °C (129–133 °F) in the centre for pink, 58–60 °C (136–140 °F) for medium.
- Rest it for 15 minutes under foil, cut the string and slice thinly across the grain.
- Rather have it in gravy? Braise it covered, in wine and stock, for about an hour and a half: the Spanish redondo mechado.

How does it differ from your whole eye of round?
Same muscle, different size. The whole joint weighs approx. 2.5 kg and makes two roasts; this one is a single roast, already tied. Both are on the roast beef joints page.
Will there be enough juices for gravy?
Not many: the cut has no fat cap. Deglaze the browning pan with wine or stock.
What is this cut called in a Spanish shop?
Redondo; “atado para asar” means tied for roasting. More counter vocabulary is in the guide to beef cuts in Spanish.
